Chicken Satay
for 2 pounds of boneless chicken breasts, cut into strips. If using wooden skewers, soak them in water for 30 minutes or more to avoid burning.
4 T. soy sauce
4 T. vegetable oil
1 T. chili garlic sauce
1/4 c. packed brown sugar
1/4 c. minced fresh cilantro
2 garlic cloves, minced
4 scallions, thin sliced.
Combine all ingredients, pour over chicken and mix well. Allow to sit for 30 minutes (no longer) Thread onto skewers and grill over medium heat until done.
